Our favorite recipe...


Fillet of Sole

Preheat oven to 375 degrees

Chop:
Farmers Market baby tomatoes
Kalamata olives (we get spicy olive mix or artichoke)
1/4 red onion
set aside

Put olive oil in the bottom of your Pyrex baking dish.
Lay fish and season on both sides (we use garlic salt, Cajun seasoning and pepper)
Then add chopped mixture above.

Bake for 15 minutes and turn oven up to broil for 3-5 minutes at the end.

Such a tasty treat!
